All hand held, on either a point and shoot (hazards) or a EOS5. I just use one of the focus indicators to line up the horizon on each shot and make sure i get a suitable overlap (i also try and make each shot composed so it could be used seperately if needed, so i usually end up with overkill!). The Cradle summit 360 i actually went round twice and that's a mixture of shots.
Both cameras were usually on auto exposure and i just tweaked the exposures in photoshop to blend in (sometimes i find it works better this way, sometime i just scrap it cause it's too much hard work). Most of the shots were taken with a portrait alignment to get more info into the shot. Either used photoshop photomerge function or PTGui batch stitcher, and then just a bit of fiddling to get it all lined up and looking ok.
As for the weather, we had 10 days of sunshine (must have brought some of the QLD weather with us). We carried around all this wet weather gear with us and didn't even have to use it, then we got back to Brisbane and it rained for the next couple of weeks... LOL!
