Over the top shared meals

Doing a 2 nighter soon. First night Is hike in late and no cook.

So I figure I’ll balance that out and go OTT for the second night....

What would you cook? Have up to 3 stoves feeding 3 people.

Proscuitto and pineapple Calzones with sticky date pudding for dessert although I don’t consider this over the top as it is standard fare on our trips

Break it up into 4 or five courses of smaller meals. That way with the 3 cookers they can be pretty much non-stop. Soup, rice meal, pasta meal, crackers with cheese & salami, dessert then chocolate... Or something similar... Oh and you need wine. What's an extra kg for the fittest person in the group.

More a whisky and beer fan than wine. Still worth considering.

Cheese and salami spread is a good option too. Possibly lunch.

Sticky date or similar desert is a rad idea.

Dry baking is a great way to cook desserts. That is how I do sticky date pudding (see flatcatgear. com)and also chocolate cake with uht cream.
Also great for muffins and damper.
For beer dog days in a can cooled in the nearest small creek is great with calzones

Instant cheesecake was my dessert of choice when I had to impress, fresh berries or tinned; mixed with a little jam and vanilla essence. Can you still get instant cheesecake in a packet?
Chocolate Instant pudding made up with double strength full cream powdered milk with extra sugar and a tot of sweet sherry mixed with raisins soaked in dark rum served with ginger nut biscuits for dipping
Pate and crackers , olives, dips, for starters. I used to make a spicy mulligatarny soup with tinned tuna and finish it with a huge dollop of crunchy peanut butter and sesame oil served that with flat bread
Naturally I used to carry crystal glasses for the wine and port and include a table cloth and good paper napkins etc

Ah, drakkar a beer drinker, and as you said over the top.... so I say-"No cook"!
Well then a box of Savoury shapes (assorted flavours naturally) and a (half a?) dozen stubbies of Sierra Nevada Pale Ale each person.
Take a half bottle (don't want to overdo it) of Pimms for a nightcap.

Other than that give me MDs meal, that sounds okay-but drop everything except for the cheesecake.

I rode at Buller a couple of years back. Followed by the big decent into merimbah.
Sat in the river and drank that very beer. I don’t think there could have been a better beer matched to that moment.

I’ll hunt packet deserts. Awesome idea.

One of my go-to meals for occasions like this is...

Start with:

Cheese/salami platter

Soup:

Home-dried pumpkin OR tomato soup - these rehydrate almost instantly
(put the dried soup in a blender before packing it to end up with a powder that rehydrates almost instantly - add a little arrowroot or corn flour to make sure it thickens up nicely when rehydrated)

For mains:

Scotch fillet steak (pack frozen, it can last for a while)
Onion & mushrooms fried in butter
Mashed potato with garlic and horseradish cream (based on dried potato flakes from whole food shop, or garlic deb from supermarket)
Fresh snow peas on the side (these will keep for a few days) - nothing like having something crispy and fresh when out bush for a few days

For dessert:

Apple crumble with UHT cream
(dried apple diced and simmered in small amount of water for a few minutes, then sprinkle crushed biscuits on top - ginger snaps are good, or home-made anzacs)

Notes:

The apple can take some time to rehydrate, so cut it finely to get it done quicker.

Because the starter and soup take no time at all, it means that people can start their gourmet meal while the main course is cooking.

For steak, you will need a decent sized frypan (Trangia pan will do two large scotch fillets, or three small ones). You will need a second stove/pan for the onions/mushrooms.

Mushrooms MUST be cooked in butter. Any other oil is a waste, in my opinion. Since you're bringing butter for the mushies, you may as well cook the steak in butter too - it will also taste better that way. Why not add some to the mashed potatos as well, while you're adding in the horseradish cream.
