A few weeks ago I tried dehydrating some sweet potato to take as a carb snack bushwalking.
I tried:
1. Peeling sweet potatoes
2. Cutting into 3mm slices
3. Boiling for about 5 mins then removed
4. Blanching in cool water
5. laying slices on towel to pat dry
6. dehydrate for 10 hours.
They came out tasty, but still a bit chewy, and not as crisp. I think if I left them dehydrating longer they might have come up crisper.
My googleing has shown some people season the sweet potato before dehydrating. And some not boiling the sweet potato before dehydrating, and someadding oil for crispier chips. Has anyone here done this? Any tips or recipes?
